We are delighted to present the following recipes for your enjoyment. Our executive Chef has chosen them to suit our tropical climate and ease of preparation.
This month's recipe:

Serves aprox 10 people:
- 350gr Mascapone
- 4 egg yolks
- 5 egg whites
- 70 gr caster sugar
- 1 pkt Savardi Biscuits fingers
- 2 shot of espresso coffee
- 2 nips kahlua(optional)
Method
- Whip egg yolks & 1/3 of sugar to creamy consistency. Whish over a double boiler with gentle heat until egg mix reaches 60 deg C. Then Cool down egg mix.
- Whisk in half of Mascarpone cheese, Fold in remaining Mascarpone Cheese. Do not over mix.
- Whip egg whites with remaining sugar until soft peak.
- Fold egg whites into Mascarpone mix.
- Trim & arrange biscuits on the sides of the glasses.
- Mix Kahlua & Coffee together & place a small amount in the bottom of each glass.
- Pour Mascarpone mix into each glass & cool overnight in the fridge.
Serve with shaved chocolate / dusting of cocoa powder.
Serve Biscotti biscuits on the side optional.
Can be served in individual glasses or one large dish.
